Low level Uni book recommendations needed

I've landed a uni gig at a 2 year college, where the kids are not all that academically inclined. I will be teaching 3 different classes: Conversation, Speech and Listening. I'm not really sure how Conversation and Speech differ, but I assume the latter focuses on giving speeches and making presentations, while the former is focused on everyday interaction.
Can anyone recommend any books they have used in the past that might help?

What about Animal Farm  by George Orwell?  It's written at a very simple level, yet offers a reflection and critique of political ideologies.  If you haven't read it, it's a sort of a fairy tale allegory about the Russian revolution where the animals take over the farm and have to form their own government.  You could have a great discussion over lines like "All animals are equal, but some animals are more equal than others."  Great food for thought.  I also used The Giving Tree by Shel Silverstein with my low-level high school students this year.  Maybe that's too low level though?

I like the Pagoda "Speaking, Listening, Expression" series for Conversation. There are 3 levels with three books in each level. I have used Level 1 for lower level university students. It encourages a lot of conversation and the students seem to enjoy it.

I also landed a gig at a university, in China, and am looking for text books or similar resources to help guide my teaching. I should be leading a class of undergrads (16 students), and post-grads (6 students). Any suggestions? I'll  check out the pagoda books

I just started at a uni myself and so far the series "Smart Choice" is really good. The itools package that comes with it is great. This is all geared towards conversation
