Today, my co-teachers asked me what I would like to receive as a gift from my principal. I don't know whether or not it is rude to give them a direct answer or if i should be vague and say I would appreciate anything. What is the proper protocol for this sort of thing so I don't offend anyone?

This sounds like a situation where I would play humble and say "Oh, no.  That's okay.  Thank you for thinking of me."  If the cT insists, then I would say "Oh, really? Okay, I would appreciate anything.  Thank you so much!"

Maybe there's a really polite way to say "I would appreciate anything", but I can't think of it right now.

The shock of it all is great.
You could one up them all and go out and buy a health drink for the principal ;D
