I pretty much only eat the rice. I am one of those stereotypical foreigners that doesn't like spicy food. I get sick if I eat something too spicy and I'd rather not even risk it. My staff understands this and are okay with it. The also realized that I don't like seafood and they seem okay with it. For the most part, my school lunches suck. I have lost weight and have a smaller appetite from 7 months of eating next to nothing at lunch. I know I should just bring in my own lunch but I feel like they would be more offended by that. There are the odd days where we have spaghetti, duck salad, sweet and sour pork, samgyapsal, meatballs, chicken salad and/or delicious fresh fruits or veggies. I basically just suffer in silence through the bad days. I can either claim something is spicy, I'm not hungry, diet or don't feel good. I haven't had a problem yet.  At least once a week there is something other than rice I can eat. My lunches don't cost that much either so I figure whatever I'll deal. However, my staff all laugh at me on spaghetti days because the lunch ladies pile my plate full of spaghetti (in the place where the rice should be) and then a teacher always fills a soup bowl and sticks it next to me. They try and force me to eat so much of it! One teacher even said "On spaghetti day I think it your birthday. You always so happy!"

Another horrid lunch at the trenches:

Spaghetti (one teacher said the noodles were more like oily ramyeon noodles. Sauce had pojang and minced carrots, mushroom, onion and ham)
Garlic bread (basically garlic butter spread on a sugary bread)
Radish kimchi
Cantalope

Variety: 3/10
Flavor: 4/10 (sweet cantaloupe saves the day)
Nutritional value: 4/10 (fresh cantaloupe saves the day)

Bibimbap with beef and bean sprouts.
Fish cake soup with flecks of salt.
Boneless fried chicken.
Strawberries.
Kimchi.

Nutritional value: 7/10 if I try and focus on sodium.
Flavour: 8/10
Taste: 8/10 (co-teacher traded me his strawberries for my soup after I said I didn't want it)

I keep seeing this sentiment come up and I'm just baffled by it.
Is this a serious possibility?
And if so, why should you be bothered by their foolish reaction?
Dunno, I've never worked at a Korean public school but I just get the impression that so many NET's there walk on eggshells all the time, so worried about offending people.
It just strikes me as childish and silly.

I think I understand what you're saying Jah, but maybe they're worried about pissing people off b/c they think they will get less out of the school. In other words if the VP and co-teachers are their friends, then the VP may let things like desk-warming slide "you can stay at home instead of coming in", let them take extra vacay days and stuff like that.

Maybe they're insecure in their abilities/skills too.

I hear ya. For me, I'd rather prove myself through professionalism and effectiveness.
If I was a Korean teacher/admin and saw the foreigner eating a bowl of rice for lunch, anxiously waiting v
for spaghetti day I'd regard them as childish and it certainly wouldn't win any "cred" from me.

*Slaughtered cabbage (kimchi)
*Vegetable brains (clump of brussel sprouts)
*Salt soup with fish food in it (Gim soup)
*Rice
*Cholesterol (Quail eggs)  http://nutritiondata.self.com/facts/dairy-and-egg-products/128/2

I could spend my time picking apart quail eggs (getting rid of the cholesterol-high yoke) and just eating the whites but for 1g of protein a pop it's not even worth picking up chopsticks. I bought Touslesjours today ahead of time just in case, glad I did.

Today was better than normal

-Black bean rice (with a substantial amount of beans, unlike the other mixed rices usually served)
-Egg and dried fish soup (salty but not too bad)
-Boney pork in gochu and sesame seed sauce with perilla leaves (more bone than meat, taste was so-so, but passable)
-Radish kimchi (blech)
-Marinated fish cakes with slivers of vegetable
C is for cookie, that's good enough for me.

Some days are good, some days are hideous. Today was a good day but I wonder if the "nutritionist" has a clue  about what the basic food groups are. Yesterday was heavy on the carbs and today it's protein. Gimme a protein-heavy day anyday, though.

- Roasted pork
- Corn slaw
- Thinly-sliced pickled daikon
- Rice
- Kimchi
- Miso soup with egg and tofu

Nutritional value: 6 (This needed a fruit or veg that wasn't canned, overcooked or pickled)
Variety: 7
Taste: 8 (Loved the pork and sweetish daikon, and the miso soup had flavour. The corn slaw had a coconut oil aftertaste, though)

Today was a good day for me.

Boneless sweet chilli fried chicken.
Peppery fish and tofu soup.
White rice.
Kimchi.
Bean sprouts in chill sauce.

Tastiness on the school lunch scale: 8.0 (that was some damned good chicken)
Suspected healthiness: 3.0 (no real fruit or veg to speak of but at least it wasn't pizza)

Today was a great day at my school.

Curry (pork and vegetables)
White rice
Crumbed shrimp
Green onion and seawood soup
Kimchi
Orange slices

Could not resist taking three of the shrimp  :P  Highlight of the meal!

Pasta in cream sauce with a few slivers of 'ham' and bell peppers
Rice
Radish kimchi
Bean paste and leaf soup
Soft-shell squash
Apple
C is for cookie, that's good enough for me.

*notsosaltysoup with Beef chunks in it
*Rice
*Kimchi
*Sweet potato noodles with tiny bits of meat and carrot
*Corn with grease (or grease with corn, not sure which)

It was OK, but it definitely wasn't "healthy".

Carbohydrate Day, Protein Day, now Red Pepper Day:

- Radish kimchi
- Sardines in kimchi
- Soup with mushroom and gochujang (because nothing brings out the subtle flavors of mushrooms like gochujang)
- Boiled seaweed
- Rice

Nutritional value: 5/10 (everything boiled or pickled)
Variety: 2/10 (red pepper in 3 of 4 dishes excluding rice - oh yay)
Taste: 2/10 (red pepper and seaweed were the 2 flavors today - oh yay)

Mixed grain rice.
Spicy chicken soup.
Pickled seaweed.
Vegetable omelet.
Apple halves.

It was probably the worst meal of the week, with a side of exaggeration.

My school is stepping up their game a bit lately.

Sweet soy sauce chicken with carrots and onions (bonus points for it being dark meat)
Cucumber muchim
Standard Rice
Standard leaf and bean paste soup
Kimchi (not cabbage, I forget the name of the kind, it's some kind of green shoot)
Strawberries

The first 2 items were enough to make me happy.
C is for cookie, that's good enough for me.

Conversely, mine took a turn for the worse today. It was bean paste soup x1000. Just bean paste with a bit of mystery meat, tofu and onion thrown in. The bean paste taste was overpowering.

Bean paste soup (no green leaves, just bean paste).
Standard rice.
Chunky radish kimchi chunks.
Deep fried bony fish.
Some kind of leaves or grass with flecks of sesame seeds and mystery sauce.

Even one of the new teachers said it was a disappointment today. I'm so sad.  :'(

Boiled pork, pepper sauce, and mushrooms.
Plain white rice.
Spinach with sesame oil.
Acorn jelly.
Tofu and miso soup.

Tomorrow has strawberries, so that's nicer.
