After School Writing Class

I'm starting an after school writing class that will be held a once week. It starts tomorrow. For their final project I'd like to do a book of some sort that would showcase their best work. Any suggestions on ideas or themes for the book? I thought they could each write short stories of some sort as one idea, but would be interested in hearing of other ideas out there.

How about compiling a newspaper? Maybe they can work in pairs and each be responsible for one article or advertisement.

That's actually a good idea though we did two newspapers for Summer Camp.  I thought a book would be a nice memento for me and the students since this will be my last year with them.
