Conversation class and assessments

So I am a new hire to a Chinese middle and high school in Korea as their conversation teacher and I've only ever done elementary public school. The other teacher and I'VE wamt to spemd a period or two assessing their levels since we don't know them yet, but we don't really know how to go about that. Any ideas or resources?

Also, this is both of our first times doing conversation and aren't entirely sure since we have no books either. So any ideas or book ideas, since the school said they would order things for us if we knew what we wanted, would be great.
