OP,

I hear you on needing a vacation from vacation.

Not that helpful, but I wouldn't bother to travel to any of the places you listed, because your vacation is way too short to justify traveling more than 7+ hours one way.

Australia and Dubai are like 10 hours plus
Indonesia is 7.5, but if trying to get to Bali and you need to make a transfer...ouch

You would be using two of your eight days just on the outbound and inbound flight.

Guam, Saipan, Qingdao (you mentioned Jeju), and other places that take 2-4ish hours makes much more sense IMO, but you know best.

Yeah I have a friend there....So I think I might go there.  But I also have a friend in Dubai too.  Thanks for the suggestion Enzo!
Personally, I think that Indonesia would be a lot better than Dubai. Depending on what you are interested in (and I guess where your friends live) there are many different destinations. Yogyakarta is great for temples and history. Bali/Flores/Lombok are great for beaches and relaxing, as well as the tri-colored lake and the tallest mountain in Indo. Papua too. Sumatra has a lot of outdoorsy stuff and beaches and a big mosque. But Like Pecan said, you will need additional travel from Jakarta to wherever you go.

I'd go somewhere closer for summer, and then go further out for chuseok (maybe Dubai like you wanted).

I went to Beijing last Chuseok. It kinda sucked because it's a major national holiday in China too so basically the entire population of China was at the Forbidden City, and I couldn't even get in. Everything else was fine but some stuff was closed. It's a good time to go weather-wise but I really didn't think Beijing was worth the trouble of going.

I was thinking more Chengdu and Tibet.  Yeah Beijing was cool but been there, done that.
